SEA CUCUMBER SOAKING TIPS:
Very important rule: all the Utensils and pots must be oil /grease and rice free throughout the whole process and absolutely cleaned
(1) Day 1 Evening -unpack and wash the sea cucumbers, soak in water overnight in fridge
(2) Day 2 Morning -boil pot of water in medium fire and put in sea cucumbers. Boil for 30-40 mins. Off fire, let water cool down and put the pot with water and sea cucumber in fridge (ensure Sea cucumber is fully submerged in the water; top up with freshwater if necessary)
(3) Day 3 Morning -extract sea cucumbers and remove internal organs, gently scrub off the inner membranes and surface area, wash clean, repeat the same boiling process (30-40 mins) with a fresh pot of water. After water has cooled off, soak in fridge overnight (ensure Sea cucumber is fully submerged in the water; top up with fresh water if necessary)
(4) Day 4 Morning -check whether Sea cucumbers have expanded and softened. If yes, prepare a fresh pot of water and let them soak in the fridge. If no, repeat boiling process but reduce boiling time to 30-40 mins and let them soak in fridge until the next morning
(5) Day 5 Morning Storage - Gently wash the sea cucumbers with running water, keep in wrap and store in freezer
