ANCHOVIES FRYING TIPS:
(1) Step 1: Swiftly rinse the anchovies over room temperature water (2 rounds)
(2) Step 2: Drain the water and make sure anchovies are dried as much as possible by tapping with a kitchen towel
(3) Step 3: Use medium low fire and put in the anchovies before the oil heats up
(4) Step 4: Keep stirring until the anchovies turns yellowish brown
(5) Step 5: VERY IMPORTANT STEP: fry until there is no bubble on the anchovies and remove from wok immediately as soon as there is no bubble seen (to prevent overcooking)
(6) Step 6: Drain anchovies on oil filter and let the anchovies cool down, ready to be served or stored
